For our June meeting we had a baking demonstration from Lesley. I’ve always found apple tarts very difficult: they fall apart when I try to get them out of the tin. This was a tart using a flat disc of pastry on a baking tray – much easier! And you can even make several pastry bases and freeze them to use as needed. Then there was an almondy, vanilla-y topping on the pastry and the apple slices arranged on that, then bake. It’s definitely one I want to add to my repertoire.

All in all, we had a lovely evening, despite the heat.
